Papoo's BBQ Baby Back Ribs

Low and slow on the smoker, glazed with Papoo's at the end.

Makes 2 racks

Ingredients

  • 2 racks baby back ribs
  • BBQ rub
  • 1 cup apple juice
  • 1 cup apple cider vinegar
  • Papoo's BBQ Sauce

Instructions

  1. Preheat your smoker to 225°F with 3-4 chunks of smoking wood (we use hickory).
  2. Pull the membrane off the bone side. The easiest way: make a small cut with a sharp knife, grab it with a paper towel and pull.
  3. Coat the front and back of the ribs evenly with the rub.
  4. Put the ribs in the smoker and leave them alone for the first hour.
  5. Check every hour after that and spritz with a mix of the apple juice and cider vinegar.
  6. After 3 hours, raise the temperature to 250°F.
  7. At about 4½ hours, check that the meat has pulled back from the bone and the ribs pass the bend test (lift one end with tongs - they should bend 45° or more). If not, check again in 30 minutes.
  8. Glaze with Papoo's BBQ Sauce and bump the smoker to 275°F.
  9. Cook another 10 minutes to set the sauce.
  10. Pull, slice, and serve with extra sauce.
