Papoo's Beef Brisket
Smoked flat with a coffee wrap and a Papoo's finish.
Makes 10-12 servings
Ingredients
- 1 flat-cut brisket, about 9 lb
- BBQ rub
- 1 cup strong black coffee
- Papoo's BBQ Sauce
Instructions
- Set your smoker for indirect cooking at 250°F with 3-4 chunks of hickory, apple or pecan.
- Trim excess fat from the lean side.
- Coat all sides heavily with rub.
- Cook for 4 hours without peeking.
- Flip and cook about 2 more hours, until the internal temperature reaches 160°F.
- Lay out heavy foil and set the brisket fat side down. As you fold the foil up, pour the coffee over the meat, then seal it into a tight package.
- Keep cooking until the brisket reaches 200°F, about 2 more hours.
- Brush with Papoo's BBQ Sauce for the last 30 minutes.
- Rest 10 minutes, then slice across the grain.
- Brush again with sauce and serve with ramekins of Papoo's on the side.
