Papoo's Pulled Pork
The sandwich that sells the sauce at every festival.
Makes 12-16 sandwiches
Ingredients
- 1 pork butt (7-8 lb)
- Dry rub
- Olive oil
- ½ cup apple juice
- Papoo's BBQ Sauce
- Buns
Instructions
- Rub the pork with oil, coat with your rub, and refrigerate while the smoker heats.
- Set the smoker to 240°F and add wood chunks (we use hickory and cherry).
- Cook until the internal temperature reaches 160°F, about 6-8 hours for a 7-8 lb butt.
- Fold heavy foil into a pan shape and set the pork in the middle.
- Pour the apple juice over the pork, seal the package, and return it to the smoker without puncturing the foil.
- When the pork reaches 195°F, take it off and rest it on a baking sheet for 30 minutes.
- Discard the juices and shred.
- Mix in 1-2 cups of Papoo's BBQ Sauce, saving some for the table.
- Pile on buns and enjoy.
